Crispy Pork Belly Bites with Honey Soy Glaze
Prep time: 1.5 hrs | Serves: 20 bites
Ingredients:
For the Pork Belly
• 800g pork belly, skin removed and cut into bite-sized cubes
• 10g sea salt
• 2g freshly ground black pepper
• 10g vegetable oil
For the Soy Honey Glaze
• 50g runny honey
• 40g soy sauce
• 10g rice vinegar or apple cider vinegar
• 10g sesame oil
• 10g fresh ginger, grated
• 10g garlic, finely chopped
• 2g chilli flakes (optional)
Method:
1. Preheat your oven to 200°C.
2. Pat the pork belly cubes dry and season evenly with salt and pepper.
3. Heat the vegetable oil in a hot ovenproof pan. Sear the pork belly on all sides until golden and crisp.
4. Transfer the pan to the oven and roast for 40–45 minutes, turning halfway, until deeply crispy and tender inside.
5. Meanwhile, place all the glaze ingredients into a saucepan and simmer gently for 5–7 minutes until glossy and slightly thickened.
6. Remove the pork belly from the oven and drain off excess fat.
7. Return the pork belly to the pan, pour over the soy honey glaze and toss to coat evenly.
8. Return to the oven for a further 8–10 minutes until sticky, caramelised and irresistible.
9. Taste and adjust seasoning — a little more honey, soy or vinegar to suit your palate.
Storage:
Best enjoyed fresh while hot and crispy. If needed, store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a hot oven at 200°C to bring the crisp back — avoid the microwave if you can. Always use clean utensils and avoid double dipping!
