Brie, Cranberry & Thyme Puff Pastry Twists

Ingredients:
• 1 sheet ready-rolled puff pastry (320g)
• 120g Brie, finely chopped
• 80g cranberry sauce
• 5g fresh thyme leaves
• 1 egg yolk (20g), beaten (for glazing)
• 2g sea salt
• 1g freshly ground black pepper
Method:
1. Preheat your oven to 200°C and line a baking tray with parchment paper.
2. Unroll the puff pastry onto a lightly floured surface. Spread the cranberry sauce evenly over half of the pastry.
3. Scatter over the chopped Brie, sprinkle with thyme, salt and pepper.
4. Fold the pastry over to enclose the filling and press gently to seal.
5. Cut into 12 even strips. Twist each strip a few times and place onto the prepared tray.
6. Brush with beaten egg yolk.
7. Bake for 15-20 minutes until puffed, golden and bubbling with cheesy goodness.
8. Cool slightly before serving — best enjoyed warm while gloriously flaky.
Storage:
Best eaten fresh on the day. If needed, store cooled twists in an airtight container in the refrigerator for up to 2 days. Reheat in a hot oven at 180°C for 5–6 minutes to revive the crisp pastry.
