Spiced Lamb Koftas

Prep time: 25 mins | Makes: 12

Ingredients:

• 500g lamb mince

• 80g onion, very finely diced

• 10g garlic, finely chopped

• 10g fresh ginger, grated

• 10g fresh parsley or coriander, finely chopped

• 5g ground cumin

• 5g ground coriander

• 3g smoked paprika

• 2g ground cinnamon

• 2g ground chilli (optional)

• 6g sea salt

• 2g freshly ground black pepper

• 20g olive oil

Method:

1. Place all the ingredients into a bowl. Using clean hands, mix thoroughly until well combined and slightly sticky.

2. Divide the mixture into 12 even portions and shape into small sausage-style koftas or compact logs.

3. Heat a frying pan or griddle over medium–high heat and add a little oil if needed.

4. Cook the koftas for 3–4 minutes on each side until deeply golden and cooked through.

5. Rest briefly, then serve hot with flatbreads, yoghurt, salad or tucked into wraps.

6. Taste and adjust seasoning if needed — a pinch more salt, spice or herbs to suit your palate.

Storage:

Once cooked, store in an airtight container in the refrigerator for up to 3 days. Reheat gently in a pan or oven until piping hot. Koftas can also be frozen raw or cooked for up to 1 month.
