Dressed Crab

Ingredients:
• 300g fresh white crab meat
• 100g brown crab meat
• 40g mayonnaise
• 10g Dijon mustard
• 20g lemon juice
• Zest of ½ lemon (2g)
• 10g olive oil
• 4g sea salt
• 1g freshly ground black pepper
• 10g fresh chives, finely chopped
• 10g fresh parsley, finely chopped
Method:
1. Place the white crab meat into a bowl and gently pick through to check for shell.
2. In a separate bowl, mix the brown crab meat with the mayonnaise, Dijon mustard, lemon juice, lemon zest, olive oil, salt and pepper until smooth and creamy.
3. Fold the dressed brown crab mixture through the white crab meat carefully, keeping the texture light.
4. Stir through the chives and parsley.
5. Taste and adjust seasoning if needed — a little more lemon, mustard or salt to suit your palate.
6. Serve chilled with crusty bread, a simple green salad or piled high into shells for a classic presentation.
Storage:
Once dressed, store in an airtight container in the refrigerator for up to 24 hours. Always keep chilled and use clean utensils — crab is best enjoyed fresh and treated with care.
