Jewelled Cous Cous
Prep time: 15mins | Serves: 4
Ingredients:
• 200g couscous
• 250g boiling vegetable stock
• 30g olive oil
• 80g pomegranate seeds
• 60g dried apricots, finely diced
• 40g raisins or sultanas
• 30g toasted flaked almonds
• 20g fresh parsley, finely chopped
• 10g fresh mint, finely chopped
• Zest of 1 lemon (4g)
• 20g lemon juice
• 4g sea salt
• 1g freshly ground black pepper
• 2g ground cinnamon
• 2g ground cumin
Method:
1. Place the couscous into a large bowl. Pour over the boiling vegetable stock, cover and leave for 5 minutes.
2. Fluff the couscous with a fork, then drizzle over the olive oil.
3. Add the pomegranate seeds, dried apricots, raisins, toasted almonds, parsley and mint.
4. Sprinkle in the lemon zest, lemon juice, cinnamon, cumin, salt and pepper.
5. Toss gently until everything is well combined and beautifully jewelled.
6. Taste and adjust seasoning if needed — a little more lemon, spice or salt to suit your palate.
Storage:
Once cooled, store in an airtight container in the refrigerator for up to 3 days. Serve chilled or at room temperature.
