Christmas Breakfast Bagels

Prep time: 30mins | Serves: 2-4

Ingredients:

•⁠ ⁠4 medium bagels, sliced

•⁠ ⁠200g full‑fat cream cheese, softened

•⁠ ⁠10g fresh chives, finely chopped

•⁠ ⁠10g fresh dill, finely chopped

•⁠ ⁠5g capers, drained and finely chopped

•⁠ ⁠2g fine sea salt 1

•⁠ ⁠1g freshly ground black pepper 1

•⁠ ⁠8 rashers smoked streaky bacon

•⁠ ⁠200g smoked salmon slices

•⁠ ⁠10–15ml lemon juice

•⁠ ⁠2g fine sea salt 2

•⁠ ⁠1g freshly ground black pepper 2

Instructions:

1.⁠ ⁠In a bowl, mix cream cheese, chives, dill and chopped capers with salt 1 and pepper 1 until smooth and well combined. Taste and adjust seasoning.

2.⁠ ⁠Lay bacon on a parchment‑lined tray. roast at about 200°C for 6–10 minutes until crispy.

3.⁠ ⁠Lightly toast bagel halves. While they toast, season smoked salmon with salt 2 and pepper 2, gently tossing to coat.

4.⁠ ⁠Spread a generous layer of the chive, dill & caper cream cheese over each warm bagel half. Top bases with crispy bacon, then folds of smoked salmon.

5.⁠ ⁠Cap with the remaining bagel halves and serve immediately, optionally securing with cocktail sticks and cutting each bagel in half for easier sharing. Serve with a massive glass of Bucks Fizz and enjoy.
