Lobster Linguine

Ingredients:
• 200g dried linguine
• 200g cooked lobster meat
• 30g olive oil
• 2 garlic cloves, finely sliced (10g)
• 1 red chilli, finely sliced (5g)
• Zest of 1 lemon
• 20g lemon juice
• 20g unsalted butter
• 5g sea salt
• 2g black pepper
• 1 small bunch parsley
Method:
1. Cook the linguine in well-salted boiling water until al dente. (slightly undercooked). Drain, but reserve 100g pasta water.
2. Heat the olive oil in a pan, add garlic and chilli and cook gently for 30 seconds until you start to smell the aromas.
3. Add the lobster meat and cook briefly until just done.
4. Add the cooked pasta, lemon zest, juice, butter, parsley and a splash of pasta water.
5. Toss over a low heat until thick, glossy and gorgeous! Season and serve immediately.
