Dark Chocolate Truffles

Prep time: 2 hrs | Makes: 20

Ingredients:

• 200g dark chocolate

• 120g double cream

• 20g unsalted butter

• 2g sea salt or chilli flakes (optional)

• Cocoa powder, for dusting

Method:

1. Heat the cream and butter on a low heat, in a heavy-bottomed pan until steaming. Be careful not to let the cream catch on the bottom on the pan.

2. Pour the hot cream mixture over the chocolate in a heat proof mixing bowl, and stir until smooth and the chocolate has fully melted.

3. Pour onto a flat metal tray and chill in the fridge until firm. Once fully cooled, divide into 20 equal pieces, and roll into balls.

4. Dust with cocoa powder and finish with salt or chilli.

Storage:

Store in the fridge for up to 3 days.
