Strawberries in Champagne Jelly


Prep time: 3 hrs | Serves: 4

Ingredients:

• 300g strawberries, halved

• 300g champagne

• 40g caster sugar

• 8g gelatine leaves

Method:

1. In a small bowl, soak the gelatine leaves in cold water until they are soft and “jelly-like”. Make sure the water is cold as if the water is warm, the gelatine will dissolve - not what we want at this point in the recipe.

2. In a saucepan, on a low heat, heat half the champagne with sugar until dissolved.

3. Remove from the heat, add the soaked gelatine leaves (discard the water), then the remaining champagne, and mix

4. Arrange your strawberries in glasses and pour over the jelly mix. Leave in the fridge to chill until set. (minimum 2 hours)

Storage:

These desserts are best served with in 24hrs. Store in the fridge until ready.
