Peri Peri Chips
Prep time: 40 mins | Serves: 4
Ingredients:
• 800g potatoes (Maris Piper or similar), cut into fries
• 30g vegetable oil
• 4g sea salt
For the Peri Peri Seasoning:
• 10g smoked paprika
• 5g garlic powder
• 5g onion powder
• 3g dried oregano
• 2g chilli flakes (adjust to taste)
• 2g cayenne pepper
• 5g caster sugar
• 2g sea salt
• 1g freshly ground black pepper
Method:
1. Preheat your oven to 220°C (fan 200°C). Line a large baking tray with parchment.
2. Place the cut potatoes into a bowl of cold water and soak for at least 20 minutes. This removes excess starch and helps create crisp fries.
3. Drain and dry the potatoes thoroughly using a clean towel — this step is key for crispiness.
4. Toss the dried fries with vegetable oil and the 4g sea salt, ensuring they are evenly coated.
5. Spread the fries out in a single layer on the tray, ensuring they are not overcrowded.
6. Bake for 25–30 minutes, turning halfway through, until golden and crisp on the outside and fluffy inside.
7. While the fries cook, mix all the peri peri seasoning ingredients together in a small bowl.
8. Once the fries are hot and freshly out of the oven, transfer them to a large bowl.
9. Sprinkle over the peri peri seasoning and toss well so every fry is coated evenly.
10. Serve immediately while hot and crispy.
11. Taste and adjust seasoning if needed — more chilli for heat or a pinch more sugar to balance.
Storage:
Best enjoyed fresh. If needed, store in an airtight container in the refrigerator for up to 2 days. Reheat in a hot oven to bring back crispness.
