Watermelon & Feta Salad

Ingredients: ‍ ‍

  • 600g watermelon, cut into bite-sized cubes

  • 150g feta cheese, crumbled

  • 80g red onion, very finely sliced

  • 20g fresh mint leaves, torn

For the Dressing:

  • 30g extra virgin olive oil

  • 20g lime juice

  • 10g honey

  • 4g sea salt

  • 1g freshly ground black pepper

Method:

  1. Place the watermelon cubes into a large bowl or arrange onto a serving platter.

  2. Scatter over the finely sliced red onion, separating the slices so they distribute evenly.

  3. Add the crumbled feta and torn mint leaves.

  4. In a small bowl, whisk together the olive oil, lime juice, honey, sea salt and black pepper until well combined.

  5. Drizzle the dressing evenly over the salad.

  6. Gently toss or leave layered for a clean, elegant presentation.

  7. Allow to sit for 5 minutes so the flavours meld together slightly.

  8. Serve chilled or at room temperature.

  9. Taste and adjust seasoning if needed — more lime for sharpness or a touch more honey for sweetness (depending on how ripe your watermelon is to start with).

Storage:

Best enjoyed fresh. If needed, store in an airtight container in the refrigerator for up to 1 day, though the watermelon will release some liquid.
