Halloumi Burger
Prep time: 30 mins | Serves: 2
Ingredients:
• 250g halloumi, sliced into 4 thick pieces
• 10g olive oil
• 2 burger buns
• 100g lettuce
• 150g tomato, sliced
• 80g red onion, thinly sliced
For the Sauce:
• 30g mayonnaise
• 10g sweet chilli sauce
• 5g lemon juice
• 2g smoked paprika
• 2g freshly ground black pepper
Method:
1. Heat a frying pan over medium-high heat and add the olive oil.
2. Add the halloumi slices and cook for 2–3 minutes on each side until golden, crisp and slightly caramelised. Remove from the pan.
3. Lightly toast the burger buns in the same pan or under a grill until warm and slightly crisp.
4. In a small bowl, mix together the mayonnaise, sweet chilli sauce, lemon juice, smoked paprika and black pepper until smooth.
5. Spread a generous layer of sauce onto the base of each bun.
6. Add a layer of lettuce, followed by the cooked halloumi slices.
7. Top with sliced tomato and red onion.
8. Spoon a little extra sauce over the top, then place the lid of the bun on.
9. Serve immediately while the halloumi is hot and crisp.
10. Taste and adjust next time if needed — more spice in the sauce or extra lemon for freshness.
Storage:
Best enjoyed fresh. If needed, store components separately in the refrigerator for up to 1 day and assemble just before serving.
